cheesy broccoli quesadillas

A simple quesadilla stuffed with with veggies and cheesy goodness for a quick toddler meal!

When it comes to toddler lunchtime (especially when I don’t have leftovers), I feel like I naturally gravitate to making a quesadilla. It’s easy for me to prepare, I can typically use things I have in the fridge, and there’s always opportunity to include some great flavor and nutrition (and in this recipe, veggies!). Cheesy broccoli quesadillas have your typical quesadilla basics (tortilla and cheese) but it becomes a little more nutrition with the addition of broccoli.

INGREDIENTS

  1. 2 tortillas

  2. 6-8 broccoli florets (washed)

  3. 1/4 cup shredded cheese (mozzarella, cheddar, mexican)

  4. Pinch of salt, pepper, & garlic powder

  5. Add-ins like rotisserie chicken, cooked & diced shrimp, ground beef, turkey pepperoni, sautéed bell peppers, etc. (optional)

  6. Superseed boosters like hemp seeds (optional)

  1. Grate broccoli florets so texture is very fine and crumbled (using a simple kitchen boxed grater) OR you can use Organic Riced Broccoli from Sprouts (comes frozen) to add some easy veg to this recipe. I just sprinkle it in frozen and it cooks in the quesadilla!

  1. Heat a pan on medium heat. Once warm, melt about 1/4 tbsp butter

  2. Add first tortilla and fill with cheese, broccoli, seasonings, and protein, then close with second tortilla

  3. Toast both sides of quesadilla until golden brown & cheese inside is melty

  4. Cut into triangles, strips, or small bites to serve (let cool for about 5 minutes before)

NOTES

  • If storing in fridge, these may get soggy with the cheese so I wouldn’t recommend storing in the fridge. That said, you can certainly freeze for about a month and then thaw and re-heat in microwave.

  • To wash broccoli, I place the florets needed (or a full broccoli crown) in a bowl with water and a pinch of baking soda for about 20 minutes to ensure it’s fully cleaned before including in the recipe.

  • You certainly have the option to use cooked broccoli (steamed, roasted, boiled) here as well. Just finely chop and add-in!
