A simple and delicious recipe to use up some leftover chicken in your fridge!

CRISPY and CHEESY Chicken Avocado Wraps! This has been one of my go-to lunches lately for both me & my toddler. I fill the wrap with some simple ingredients (and usually leftovers), toast both sides in a pan, and serve for an easy lunch or dinner.

This recipe is a great way to use fridge leftovers & add some extra nutrition to mealtime! Sprinkle with hemp seeds, add sautéed & chopped spinach, tomatoes, etc.! The options are truly endless when it comes to wraps. You can customize the below ingredients to you & your little ones’ liking.

INGREDIENTS

Blue silicone suction plate with crispy cheesy chicken avocado wraps (cut in two), oven-baked sweet potato fries, and ketchup for dipping.
  • 1 large tortilla of choice (I find that burrito-sized tortillas work best)

  • Big spoonful of cooked & diced chicken

  • 1/4 mashed avocado

  • Sprinkle of shredded cheese

  • 1/4 tbsp butter (for pan)

DIRECTIONS

  • Fill very center of tortilla with ingredients, spreading mashed avocado first

  • Heat pan on medium heat, then melt butter

  • Toast both sides of wrap until crispy & golden (took me about 2-3 min per side)

  • Cut in half to let cool & serve!

NOTES

  • Any tortilla will work in this recipe, but I find that the burrito-sized tortillas work best. Since they're larger in size, it's easier to fill with ingredients and close up so you don't have any spillage when toasting on the pan!

  • In place of freshly mashed avocado, you can use store-bought guacamole! We love the little guacamole packets from Costco and they also work so well in this recipe.

  • You can use other proteins here like ground beef, ground turkey, etc. This recipe is also perfect for rotisserie chicken, which we like to buy early in the week and use for various recipes!

  • Shredded cheese will work best here but is totally optional as well if you want to exclude.

  • Assuming your protein is seasoned and you used cheese (has sodium) you may not need to season the inside. If your protein is a little blander though, you could add seasonings like fajita, Italian, etc. -- all depends on what you're including inside!
