A simple, chilled pasta salad with subtle Mediterranean flavors for a lunch or dinner!

This chilled pasta salad is as simple as tossing cooked pasta with a few simple ingredients and Greek dressing! It pairs nicely with my Grilled Turkish Kofte recipe, but you can serve this with any protein you like (in the photo above I serve with rotisserie chicken and a side of grapes). I like prepping this at the beginning of the week to make easy at-home or lunchbox meals for my little one!

INGREDIENTS

  • 16 oz of pasta (your favorite style!)

  • 1 finely chopped red bell pepper

  • 1 finely chopped yellow bell pepper

  • 1 diced medium-sized cucumber

  • 1 cup of quartered cherry tomatoes

  • Handful of feta cheese

  • Drizzle of Greek dressing

DIRECTIONS

  • Cook pasta and let cool at room temperature

  • Add in all ingredients to pasta once chilled and toss with dressing

  • Serve chilled or slightly warmed!

NOTES

  • Store in fridge for 4-5 days and freeze for up to 3 months!

  • For add-ins, olives would go really well here also. Totally customizable though - whatever you like in your pasta salad, toss it in.

  • While you can use practically any pasta here, my favorites for this recipe are farfalle or rigatoni as they both hold dressings and sauces really well.

  • The bell peppers and tomatoes can be roasted vs. including un-cooked here. I usually roast at about 400F for 30-40 min!
